1. Paneer Bread Roll

This is a recipe which is tasty and good and a nice addition to the meal. It is not very difficult to make. Cooking is not an easy task especially while fasting. This recipe has vegetables and bread in it so it is healthy for the diet and tasty as well. This is an excellent addition to the Pakistan iftar recipes.

Ingredients:

  • Paneer
  • Oil
  • Cumin
  • Red chili powder
  • Ginger and garlic paste
  • Garam masala
  • Turmeric and salt
  • Green peas
  • Bread and butter

Process:

  • Trim the bread slices.
  • Heat the pan, add oil and add cumin.
  • Sauté the ginger garlic paste, until the raw smell is gone.
  • Add green peas and sauté to the pan.
  • Add red chili powder, garam masala and turmeric. Stir it, but switch the stove off first.
  • Add crumbles paneer and coriander leaves. Mix them well.
  • Divide the mixture and make oblong shapes. Flatten the bread slices with a rolling pin or a chapatti roller.

Ingredients:

  • Dates
  • Khoya, mawa and milk solids
  • Ghee
  • Chopped nuts (optional)

Process:

  • The dates need to be chopped and then blended in a mixer. If dates are hard, soak them in water for some time
  • Put some ghee in the pan and heat it.
  • Add dates and mawa. Mix and cook it until it is well blended. It should be cooked for 4 minutes.
  • When the mixture is cooked, leave it on the side so it can turn into a mass as well.
  • Transfer the mass to the greased tray, level it and put the nuts in it.
  • Let it cool and then cut into any shape you want.

3. Badam Milk

This drink is not just tasty but also highly nutritious. It is a very balanced and energizing drink hat can certainly make you fresh and energized after your fast. This is an excellent Pakistani iftar recipe, especially in the summer season.

Ingredients:

  • Almond
  • Milk
  • Sugar
  • Saffron
  • Cardamom powder

Process:

  • The almonds need to be soaked for about six hours.
  • Boil the milk on a low or medium flame and add sugar, saffron and he cardamom powder. The saffron and the cardamom powder are optional. You can skip them if you want.
  • Grind the soaked almonds with a little water or milk.
  • Pour the grinded almonds in the boiled milk. Keep siring and let it boil for 2 to 3 minutes.
  • Pass it through a sieve.
  • You can serve it hot or chilled.

4. Cauliflower Pakoda

Ingredients:

  • Cauliflower
  • Curry leaves
  • Ginger and garlic pastes
  • Ajwain
  • Red chili
  • Garam masala
  • Rice flour
  • Salt, turmeric, water and oil as needed

Process:

  • The cauliflower florets need to be added to the salted hot water and leave it for some time.
  • Drain them and add them in a mixing bowl.
  • Add curry leaves, ginger and garlic paste, green chili, red chili, garam masala and mix well.
  • Sprinkle flour, salt and water in the mixture.
  • Heat the oil in a frying pan on medium heat.
  • Add he mixture in the oil with a spoon and fry until brown. Serve them with chutney.

Ingredients:

  • Boiled Corn
  • Paneer (optional)
  • Chopped onion
  • Chopped tomato
  • Grated carrot
  • Green chili
  • Coriander leaves
  • Chaat masala
  • Lemon juice
  • Salt and pepper powder if needed

Process:

  • Soak the corn in salted water for some time. Add them in boiling water and cook until boiled.
  • Add all the other ingredients in a mixing bowl and toss. Serve it when it’s still hot.
  • If you are adding paneer, tawa fry it in ghee before adding.

6. Reshmi Kebab

This is an extremely tasty meat recipe for the iftar menu.

Ingredients:

  • Boneless chicken
  • Fresh cream
  • Yogurt
  • Lemon juice
  • Pepper
  • Chopped coriander leaves
  • Ginger and garlic paste
  • Salt and almonds

Process:

  • Blend almonds, cream and yogurt together.
  • Add the remaining ingredients to the boneless chicken with ground paste and leave it for margination for at least four hours.
  • Preheat the oven at 240 C for 15 minutes.
  • Put chicken on skewers and grill for 15 minutes on both sides respectively.
  • Brush butter over them and serve with chutney.

7. Tindora Chana Dal

This is an easy recipe which works well with the both rice and roti.

Ingredients:

  • Chana dal
  • Sliced tindora
  • Turmeric powder
  • Oil
  • Cumin seeds
  • Grated ginger and dried bay leaf
  • Green chili
  • Tomatoes
  • Salt and garam masala
  • Chopped coriander leaves

Process:

  • Wash the dal and soak it for 10 minutes and cut the both ends of tinora in four pieces.
  • Chop tomatoes, coriander leaves and the green chilies should be slit.
  • Pressure cook tindora and dal. Add turmeric powder.
  • Add ginger paste, chilies and sauté until brown. Add tomatoes, cover it and cook it slowly until the tomatoes are mashed.
  • Add red chili, garam masala and cook for a while. Add cooked dal with tindora and add some water, simmer it for some time.
  • Garnish with coriander and serve.

8. Badam Korma

Badam Korma is a special Pakistani dish which is equally enjoyed by the people of all age group.

Ingredients:

  • Lamb cut
  • Desi ghee
  • Green cardamoms
  • Salt
  • Garlic cloves
  • Peeled almonds paste
  • Cream

Process:

  • Blanch the meat in boiled water for 1-2 minutes. Drain the water and wash meat, set it aside to cool.
  • Take a pam and add meat, ghee, salt, green cardamoms, garlic cloves and cinnamon sticks.
  • Bring the mixture to a boil and stir well.
  • Fry until the color of the meat is changed. Add some water.
  • When meat gets soft, remove from heat and add almond paste. Pour in the cream and mix.
  • Return the pan to low heat and simmer mixture while stirring.

9. Adas Rishta

This is the perfect Ramadan dish for children because they love to eat pasta.

Ingredients:

  • Macaroni pasta
  • Olive oil
  • Chopped onion
  • Finely chopped garlic
  • Dried green lentils
  • Chicken cubes
  • Coriander leaves

Process:

  • Boil macaroni pasta in salted water for at least 10 minutes. Cool, strain and put aside.
  • Take a pot and warm olive oil. Add onions and garlic and cook for 4 minutes.
  • Add green lentils, water and then chicken cubes.
  • Cook for 45 minutes on low heat.
  • Add macaroni and chopped coriander. Let it simmer for 5 minutes on low heat.
  • Garnish with coriander leaves and serve.

10. Baklava:

This is an extremely tasty and beautiful sweet dish.

Ingredients:

  • Filo pasta
  • Butter
  • Pistachios
  • Sugar
  • Lemon juice
  • Rose water

Process:

  • Brush the baking tin with butter and put a layer of filo pasta in it. Brush each layer and repeat the process for eight layers.
  • After the las layer, sprinkle the grounded pistachio.
  • Bake it for 30 to 40 minutes at 150 C.
